Calzones!

My wife had a meeting tonight, so for dinner with the kids I threw together what turned out to be delicious calzones. Much to the surprise of all involved.

Here's a rundown of what I did and what I used:

Preheat oven to 450 degrees.

16 oz. block of mozzarella
some Parmesan (to preference)
2 eggs

Grate the cheeses, mix in the eggs.

1 tbsp olive oil
1 tsp thyme
1/4 cup green onions
2 cloves garlic

Warm the oil and thyme on medium heat, then add the green onions (chopped) and garlic (minced). Cook approx. 5 minutes or until the green onions begin to brown.

1/3 cup of water

Chop onion. Cut broccoli into roughly 1 inch pieces. Add to green onions, garlic and oil along with the water. Cook covered until water has cooked off and broccoli is steamed and soft. Add more water if necessary to steam the broccoli.

2 hot link sausages (pre-cooked, hot dog size)

Slice pepperoni and sausages into small pieces. Once the water has cooked off the mixture on the stove, add these meats and heat.

pizza sauce (you shouldn't need salt in this recipe, due to the pizza sauce)
pizza dough x 2 (I work with store-bought dough, already raised. In the Treasure Valley you can find this at Winco.)
corn meal

Scatter corn meal on a pizza tray. Stretch one of your pizza doughs into the shape of a pizza and place on the tray. On one half of the dough, spoon the mixture from the stove, then add a few spoonfuls of pizza sauce. Top that with almost half of the cheese. Fold over and press down at the edges to seal. Brush with olive oil and sprinkle a little cheese on top. Now repeat with the other dough on the other half of the pizza tray.

Cook for approximately 18 minutes or until the dough is golden brown.
